A good vegetable broth is a foundation. It’s a foundation upon which delicious dishes are built. Broth is like roots, anchoring a dish in the rich flavors of the earth. A flavor synergy of vegetables in water results in a woody, earthy, and slightly sweet liquid gold. Warming and nourishing, this broth is a base for any soup, or a splash of flavorful moisture to sauteed greens, or your lifeline for fasting on a detox. This is a basic recipe that can be enhanced with any other vegetables of your desire. A really good, full flavored soup in the colder months can be profoundly transformational. Shiitake mushrooms are the essential ingredient, blessing this broth with the umami. In reality this broth is essentially an immune boosting mushroom broth with some vegetables to add dimension to the flavor. Mushrooms are tasty and are a powerhouse of healing properties. Simmer the shiitakes deeply for a long time to extract the medicinal properties, then add the other vegetables to extract their flavor and minerals. When the mushrooms have been simmering for a while on their own, I highly suggest lifting the lid and inhaling the broth steam gently rising from the pot, you’ll be transported by the aroma of a magical woody mushroom forest.
If you’re fasting for a detox, this warm liquid is divine. There’s nothing like a warm bowl of broth when you’re feeling the deep hunger that many of us don’t often experience. When the body is craving true nourishment, the broth provides. It’s nourishing warmth is so welcomed when the body temperature drops from fasting, warming your whole entire being from the inside out.
In the autumn and winter, I love having a jar of this on hand for a spontaneous soup inspiration. I suggest making a big full batch, you can alway freeze a jar of any extra. For ultimate flavor and healing potential, I recommend using organic ingredients, this is especially important if you’re detoxing.
- 1 lb shiitake mushroom
- 6 carrots
- 1/2 cabbage head
- 5 kale leaves
- 1 large onion halved
- 8 cloves garlic
- 3 bay leaves
- ¼ bunch parsley
- 1 qt water filtered
- Boil a big pot of water.
- Begin the broth with shiitake mushrooms. If possible, let them simmer for 3 - 6 hours before adding the other veggies. Boiling shiitake mushrooms for a long time will extract their immune boosting properties.
- Add the rest of the vegetables and simmer for at least 2 hours, longer will add more flavor to the broth.
- Turn off, let cool and strain.
