Avocado, Seeds and Herbs | Detox Series

As a child, I loved eating half of an avocado, still in the skin, with balsamic vinegar poured into the pit hole. I perfected the art of spooning each bite out with the perfect amount of vinegar. This dish is inspired by my childhood avocado memories. This version is yummier, more robust and healthier too! It’s more alkalizing and has the added nourishing power of black sesame, herbs and lemon juice.

My favorite part of this dish is the texture of the sprouted black sesame seeds, seriously they are so fun to eat. At the first bite they are buoyant and perfectly crunchy, then chewy and so full of flavor. Soaking and sprouting them makes them much easier to digest and absorb the nutrients they have to offer.

The umami in the coconut aminos beautifully weave together the flavors of all the healthy fats of the avocado and sesame seeds. The herbs and lemon juice add a fresh zestyness, enlivening the dish for a satisfying yet light snack or meal.

I recommend keeping sprouted black sesame seeds on hand so you can whip this up anytime whether you’re cleansing or not. It takes about 10 minutes and it satisfies on so many levels. Powering you up with good fats, it’s great for breakfast! (Especially if you’re looking for low sugar, grain free, or vegan breakfast options.)

Use any herbs that you like, which may change according to the season. I recommend chives and parsley for an easy mix, but a mix of a greater variety of herbs is so delicious too. Growing your own herbs is a great way to regularly enhance your food with depth of flavor and the incredible healing properties of herbs. Also, if you grow your own you’ll reduce your consumption of single use plastics, always a win!
